Hi,
I was in over the weekend and thoroughly enjoyed your Ace of Spades. Got to have some Rise Up Red too. Nicely done on both! Excellent flowery aroma on the IPA with enough bitterness to balance out the high ABV. As a hobbiest home brewer, I’ve been researching the imperial IPA style recently. What effect does hopping in the mash tun give you? Does it add much in terms of IBU?

“Mash hopping adds really more of a background flavor of hops in the beer. Since the temperature is much lower than in the boil, theoretically flavor and aroma components bond to wort compounds when the wort is concentrated allowing them to survive the boil. It’s part of what gives the Ace it’s continuous hop flavor, from aroma, to first sip, and swallow.”
